Thoughts on this France Itinerary?

Another vote for Honfleur. Rouen can be done on the way. You can either pick up car there, or from Paris and call at Rouen en route. If the latter, and you want a small village experience, try a short detour to Lyon-le-Foret.
Honfleur is an attractive and relaxing base from which to do MSM, although (and I realise your time is short) it would pain me tremendously to get as far as MSM and not stay a night (or 2) at Dinan, fitting in St Malo en route.
I don't know provence (yet) but based on earlier remarks by Stu Dudley I'll be staying at St Remy and Vaison-la-Romaine, plus maybe Goult or Loumarin for the "middle" section.
