Taxi "tour" in Puglia

We are going to be traveling in Puglia without a car and are thinking of hiring a taxi for 2-4 hour drive around the Gargano or Salentine Peninsulas. Has anyone done something similar (anywhere in Italy) and about how much should we expect to pay?

I have recently used taxis in Puglia, though not for a period of days. What I did find out is that prices vary greatly. Our first journey was from Bari airport to Alberobello which took about 45mins I suppose. That cost 120euros, which was quite expensive, we thought. Later we used a taxi to get from Ostuni back to Bari which was further and took about 1hr. This journey cost 80euros. It seemed that local pre-booked fixed-price journeys cost less than just picking one up at the airport. How you would book that I don't know, maybe someone else can help.
