I also recommend overnighting in Venice.
I would NOT go as a day trip from Rome, you'll spend close to 8-9 hours just traveling.
Rome train station: Termini
Venice train station: Santa Lucia, on the island.
I just returned from Italy and took the train from Naples to Rome (and Venice to Florence).
The trains are very safe. As anywhere else, just be alert and watch your belongings. Keep valuables in your carry-on and keep that with you. Luggage goes in a rack by the door but it should be fine. No one wants to steal your big suitcase and clothes...
If you book ahead of time on TrenItalia web site, then you can get discounted seats. We booked Business class for only a little more than 2nd class seats.
When booking on TrenItalia, I did NOT register. (I read somewhere registering causes problems for foreigners... ) It was very easy. They send you the tickets by e-mail within seconds and you print them out. Basically you need the PRN number. Print the tickets out and also write the PRN number down elsewhere, just in case.
For 8 days total (do you have 9 nights or 8 nights?)
consider 2 days in Venice and 6 in Rome.
Or at least a week in Rome with one night (two half days) in Venice.
I highly recommend the 2 nights in Venice though, so you have a whole full day without unpacking, checking in, etc.

Even if you end up having to pay for two nights of lodging (one in Rome and one in Venice) I would try to stay overnight in Venice. Venice after the crowds leave is lovely to stroll about. Hearing the orchestras play in the uncrowded St. Mark's square was a highlight of our last trip to Italy.
