Does anyone know what are the consequences of traveling to schengen countries while waiting for student visa extension (study visa in Sweden)?

You should contact the authorities issuing the student visa extension and ask them.

My guess is, since Sweden is in the Schengen Area, that travelling abroad within the Schengen Area will be unnoticed by the Swedish authorities since there's no passport control within the Schengen Area.

That said, you still need your passport to travel around the Schengen Area(it just won't be checked on the border), so in case your passport is held by the office doing the visa extension, you cannot leave Sweden legally. In that case I wouldn't risk to travel anywhere else than Norway without a passport.
