On Sunday's while traveling I try to do something that I never do at home, go to Mass. On our last trip we caught Vespers in Florence and High Mass in Assisi.

After Mass, Arrezzo has a Sunday market in Piazza Grande first Sunday of each month("antiques", etc.).

You could do a Piero della Francesca tour. We did this on a Sunday a few years ago. We drove to Sansepolcro, visited the Civic Museum there for some his Piero's most famous works, then drove to Monterchi to see the "Madonna della Parto" and wound up in Arezzo to see the fresco cycle at the church of San Francesco. Resevations may be needed for the fresco cycle.
