By the way, I think staying in Aix is problematic given the traffic.

My response is more in the way of asking: do you know which part of Provence you want to be in? The Luberon vs. Les Alpilles? Further toward the coast, as Underhill suggests? I would probably be making my decision with that criterion in mind, if I really preferred one area, or perhaps didn't want to drive too much to visit other areas. Another approach might be (and perhaps this is yours) to simply make the hotel the priority and go from there. If you really liked Ousteau de Beaumaniere (which offers top food and lovely grounds and a good sized pool) you might consider, if you want to base yourself in the Luberon instead, staying at Les Bories. I really like having lunch poolside there (very cool round pool) but it is very expensive. Probably in a similar price class to Oustau.

Be sure to request a dinner reservation at La Ferme de la Huppe--it's very popular with locals, for good reason. Excellent food at reasonable prices.
