The Tripit idea is great.

But for just writing little notes and thoughts or sketches, I love my Moleskine! there's a little pocket in the back and the elastic band to help it stay together is very helpful. I try not to stress over writing too much because it detracts from enjoying what's going on in front of me.

I like to keep a plastic report binder (the kind that folds up and paper can't escape from it, not just a report cover) with any large, important documents, and then a small receipt folder for anything smaller. Along with the Moleskine, it all fits in an expanded folder and is protected from rain or spills. I try to keep it really simple, and organization is much easier that way.

I haven't used Tripit on an actual trip -- I've checked it out before -- but printing out Google Calendars can be quite useful if you are rather serious about your itinerary.
