I doubt that emailing a CC number is much less safe than handing one's CC to a waiter who disappears with it for 15 minutes.
To increase the security, use 2 email addresses and send half the CC number to one and half to the other.

I've done this for quite a few years now. I do just keep the last four numbers; I know in what "order" the cc numbers are. I also had pdf copies of the passports, visas, green-cards, etc. And silly me, this last trip, I forgot to send to myself the hotel confirmations. But Serendipity worked, we were in better hotels!
