Look out for any shop called Cartoleria. Obviously those best equipped with school supplies are near the schools. The big supermarkets also offer school supplies and even take orders for school textbooks.
I am not sure whether you are looking for something specific for Italy or to take home. For school books it is also possible to buy second hand books in good condition - look out for the Libraccio chain of shops.
If you have a child about to start school in Italy be careful what school bag you choose and your choice may depend on the age. For many years everyone used bags (zaini) from Invicta but more recently everyone (at least where I am) moved to Eastpack. However, especially at high school it is "cool" not to use a branded article but something which does not even resemble a school bag.
Italy is tremendously fashion conscious and this is also reflected what students wear and use when at school.
