I eat rare pork quite often. In Western Europe, at least, it is without risk. I don't know if I would dare to try it in North America. Meatpacking standards are not at all the same.

Just my opinion, but the worst steak tartare I've ever had here was at Les Deux Magots. It tasted like sund-dried tomatoes and was rather oily.

Thank you everyone for you suggestions. Our family has a tradition of trying at least one new food item on every trip and my son and I have both decided that this trip it will be steak tartare. I am willing to risk the raw beef, stories of tapeworms, horsemeat and illness as I have not seen any massive reports of Parisians, or anyone else, dropping like flies due to the consumption of raw beef. I do appreciate the warnings though and feel free to laugh at me if you read my obituary showing that I have died from eating steak tartare in Paris.

Any further suggestions would be most appreciated. Thank you. J
