Spread of Dynamic currency conversion in UK

Posted this yesterday but thred seems to have disappeared.
Ran into DCC in a hotel in Scotland recently. Tried to pay my hotel bar bill with US credit card. Slip was given to me in US$ with converson rate printed of about $1.88 (officially 1.83) with the statement "I accept the conversion rates listed" underneath the signature line. I asked the clerk to redo the charge in pounds since I did not accept the rate. Was told that he could not do it. Asked to cancel lthe charge - said he couldn't do it, too complicated! He ended up cancelling the bill (small amount) and giving me the amount in pounds to make up for my credit card charge.

For DCC experts, the clerk said no notification was given to the person swiping the card. They only punch in the amount of the bill in their currency and the slip comes out converted. Is this true? It looks something special needs to be done to bypass the automatic conversion.
