Spotted Dick - Desert
While visiting freinds in York England I frequently saw "spotted Dick" on the dessert menu.<BR>What is it?<BR>Serious answers please!

Recipe for Spotted Dick 2 oz white breadcrumbs <BR>2 oz self raising flour <BR>4 oz shredded suet <BR>8 oz prepared stoned raisins <BR>1/8 teaspoon salt <BR>1/2 grated nutmeg <BR>1/2 teaspoon ground ginger <BR>1/8 teaspoon mace <BR>1 oz whole candidied peel, finely chopped <BR>grated zest of one orange <BR>3 eggs <BR>3 tablespoons brandy <BR><BR>These are the ingredients, it gets it's "spots" from the raisins!<BR>Kate<BR>

Kate,<BR>thanks for recipe. Can you give more particulars - ie oven temp, time to cook.<BR>Is it baked like a cake in a pan?<BR>And ....dumb question but what is suet?<BR>Ta!

It's a steamed pudding..put it in a bowl or pudding basin, cover with greaseproof paper and cloth or use a steamed pudding pan with cover, set in pan of boiling water about 1/4 way up the sides and steam for about 2 hours or so. suet is animal fat , usually from around the kidneys

Add the raisins making sure that noneare stuck together. When these ingredients are well mixed, add the salt, nutmeg, ginger, mace, candidied peel and orange zest, mixing thoroughly. <BR><BR>In a small basin beat the eggs well and add them with the brandy to the mixture, stirring for at least five minutes to amalgamate the contents thoroughly. Pack the pudding basin with the mixture, cover with greas-proof paper and foil and tie down with a string. Steam for four hours, making sure that the saucepan doesn't boil dry. Serve with lashings of hot custard. <BR><BR>Here ya go~Enjoy!Kate

I keep this site in my internet favourites so I can drool over the pictures now and again...<BR><BR>http://www.hwatson.force9.co.uk/cookbook/recipes/desserts/steamedpuds.htm<BR><BR>Here's another recipe (Suet is the only way to go - probably in the US you will have to get Aorta vegetarian suet from a Brit shop.<BR><BR>Raisin Suet Pudding (Same thing as Spotted Dick but some reason didn't use the name)<BR><BR>Prep and cook time: 2 hours +<BR><BR>Serves: 6<BR><BR><BR>Ingredients<BR>375g plain flour<BR>4 x 5ml spoons baking powder<BR>175g vegetable suet<BR>75g seedless raisins<BR>40g caster sugar<BR>zest of ½ lemon<BR>300ml cold water<BR>15g caster sugar<BR><BR>Method<BR>In a bowl mix together the flour, baking powder, vegetable suet, raisins, caster sugar, lemon zest and water to form a soft dough. <BR><BR>On a lightly floured surface roll into a sausage shape 18cm long. Place on a piece of greaseproof paper and wrap, then place on a tea towel and wrap once again securing with string at both ends. <BR><BR>Place in a steamer over a saucepan of boiling water, cover and cook for 1½-2 hours. <BR><BR>Remove from the steamer, unwrap, sprinkle with sugar and slice into portions. I think somebody has already mentioned Helen's British cooking site at http://www.hwatson.force9.co.uk/<BR><BR>It has lots of good pudding recipes. I think that the Spotted Richard thing was a supermarket publicity stunt. It certainly worked! Practically anything can have a sexual meaning nowadays so who cares about saying Spotted Dick. If you are that prudish the alternative name is Spotted Dog.
