One way is boat. Brittany Ferries Santander to Plymouth/Portsmouth, then buy a rail & sail ticket to Ireland, quickest (& most trains) to Holyhead, though you also have the option to go to Fishguard. It's £30.50 single from any rail station in Britain to Dublin via Holyhead. But there are day-time TGVs and also night trains with couchettes to Paris; sometimes you have to change trains on the Spain/France border. search these forums for advice on travelling in Europe by rail.
But I tried http://www.brittany-ferries.co.uk & couldn't check the schedule for Santander ferries. I think P&O do one to Portsmouth as well, but they take 24 hours or more.
There are also direct ferries from Cherbourg & Roscoff in northern France to Cork & Rosslare in Ireland

I have just tried to sort out some palns for customers of mine going back to the U.K., from Galicia Spain.
The Ferries, trains and busses seem to be busy or booked.
So they hired a car drove to a convenient location near the border with France. (Barcelona) got on a train to cross the border. Then Hired another car and drove to the channel ports. No hotel or trains were booked to give some flexibility.
If you look at this website, (which sometimes collapses under the laod9 you can see various options of ferries. There is one from France to Ireland.
Or get to the U.K. and hire another car, or train or bus to Wales and get another ferry. The website will also give you details of that too.
However it is reported that Eurostar trains and some cross channel ferries have put up prices.

Good luck as this journey will not be easy and will take quite a number of days.

I don't think eurostar put up prices because of the disruption. they have a system where they offer a certain number of "base price" tickets, and once these are sold the price moves up. So if you book ahead it's normally cheaper. If you try to book at the last minute, as hundreds are now, then only the most pricey tickets (if any) are left.
