How much time do you have? And any particular countries you are interested in? It's very difficult to offer any suggestions if you don't have any idea of places that you will like to visit. You can probably check out contiki's or G adventure eastern europe tour if you will like an escorted tour.

Alternatively, it is pretty easy to travel on your own if you are willingly to do some research and planning on your own. I documented my eastern europe travel on my travel blog, you can browse it for some reference. Good luck with your planning!
