Spain - 6 Days/6 Nights Around Madrid

I am arriving in Madrid via train on a Monday in May. I am traveling with my husband and we are in our 40s.

We will be in Madrid for 6 days and 6 nights. We are leaving on Sunday morning.

I am thinking I would like to spend the last three nights in Madrid. Arrive Thursday evening, spend all day Friday and Saturday in Madrid.

What should I do with the rest of the time?? Monday thru Thursday.

I was thinking we could rent a car Monday morning and drive to surrounding areas till Thursday evening. I would like to go to Segovia. I would like to visit castles and see sites. I would like to eat good food and drink wine.

Any suggestions for driving itineraries???

Is this a good plan?

Many thanks.

We visited Spain last October. Segovia was nice, but we even liked Salamanca better. The main square in Salamanca is grand, and it is a lively town with a large university.
The Royal Palace of La Granja de San Ildefonso is a spectacular palace with elaborate grounds that I would definitely recommend. It is about 50 miles north of Madrid and near Segovia. It was closed on Mondays when we went.
