Southern France in March?

We are thinking of a trip to Southern France in early March, for maybe 18 days (this includes "flying days")

What are your favorite places, small towns to base in, visit? Monte Carlo and glitz not interesting to us, we like History, Castles, charming villages, lovely landscape.. We're looking at the Languedoc, and Provence areas. Carcassone and Arles look interesting.

Also thoughts on the weather in early March?
