By "side trip to Florence," I hope you mean part of your trip skiing and part of your trip in Florence and not some sort of day trip. It's about 5 hours from Torino to Florence (plus time to get to Torino from a ski base). Think open-jaw air reservations: into Torino, out of Florence.
Another option would be to divide the trip in thirds: ski for x days, visit Florence for 2-4 days (leaving your ski stuff in Torino if possible), and return to Torino for 1-2 days before flying home. Even presuming you'll rent skis and poles (and possibly boots), you'll have more luggage to haul around than you would on a typical touring trip. If you rent a car for the Florence portion, taking your extra luggage isn't as problematic, as long as you rent a large enough car. Travelling by train with extra luggage would be a pain.
