<< We like shopping (not chain stores and not Rodeo Drive-type things that we can't afford or touristy souvenir type dime-a-dozen things, but more upscale home and art things). We like nicer restaurants. We like to ride bikes and people watch. We will go see the beach (but maybe for an hour only).......,We like to see the highlights and what makes a place special.>>

This is what youíre looking for yet you are discounting St Tropez which offers what you want from your list of side trips from Nice. In a rental car it would have been an easy day trip, around 2 hours drive each way, if you take the coastal road itís a beautiful drive. Traffic and parking can be an issue in St Tropez but if you arrive early enough itís possible to park & miss traffic. Other posters have said itís too far for a day trip, maybe for them it is but for me from Nice, itís ok.

Taking the coastal road from Nice to St Tropez in July would be more like 4 hours one way. The short strech between St Maxime and St Tropez can easily take an hour.
You could leave early - ie before 7 am - but you'd be stuck in traffic coming back, unless you make it really late.
You can take a boat from Juan-les-Pins or Cannes; probably from Nice too. That will drop you right in town, but takes a while.
I love St Tropez, but I avoid it in July and August. Especially on market days.

I agree, St Tropez is too much of a hassle for a day trip in July and August. The fastest route quoted is using the tollway, and the stretch of road from St. Tropez to the tollway is what takes so much of the time. (The town is nice, but not worth 6 hours of round trip travel. The beach is wonderful -- except for the crowds -- only if you are staying overnight or for a few days, with a car).
