I wonder if you know Mary Taylor Simeti's books on feasts and food in Italy. Persephone's Island is the title of one of them. If you read it before you go, you will get great cultural context for all teh Sicilian specialities.

Most of my favourites in Sicily are the simple things, such as:
Sfincione pizza
Panella
Seppia (cuttlefish)
Veal Marsala
Cannoli and Cassanta
Arancine
the best beef carpaccio I've had
While wandering about a tiny beach some locals started to pick off little crustaceans from rocks and ate them raw. We tried them - not the greatest but a fun experience. Same with raw sea urchin.
fresh oranges and lemons
