Should we spend our last night closer to the Brussels airport?

Hilton, Novotel, NH?
As I said above, I don't like these hotels too much.
And all this trouble only for a dinner around Grand Place (might be nice in summer when you can sit outside, but now?)?

I don't know what's wrong with the Novotel or NH on Grasmarkt.
I'd be surprised if the airport Sheraton was not offering more amenities than those two, but it's also in a different price range, usually.
OTOH you seem to like the Easy Hotel which I would rate as a very basic 2* hotel - so it's not really clear for me what you base your preferences for "pleasant" on if you would stay at the Easy, or the Sheraton - but not at the NH.
Anyway, Grand Place is not far from Central. If OP wants a night in town or not will be his/her/their decision anyway.

I would either stay at the Sheraton if I am anxious. You go on foot to the airport.
Or on grand place un Bruxelles as suggested - yes 5 min walk from gare centrale from there to BRU (sometimes with a quick stopover in Bruxelles midi).
Or in Antwerpen close to the superb central station. Hardly needs more time than frim Bruxelles.
My belgian friends take very early flights or very late.
11 am is slack in traffic jams indeed as you must be there around 8 30 9. You can easily add 45 min to a journey of 20 Minutes ride.

Only semi-related.

Last summer we were in Amsterdam. We had a 10AM flight home.
I got the idea to check out of our hotel, leave our luggage there during the day and spend that day wandering thru Amsterdam.
We stayed in Amsterdam for dinner and took an Uber to the airport (Sheraton also has the closest hotel right beside the terminal and a two minute indoor walk).
We even walk around in the airport terminal and knew which signs to follow. Very good idea.

Instead of the Grand’ Place, why not stay on the Sablon? Very pretty, a short walk to the GP. The NH Sablon (formerly Grand Hotel du Sablon) had Sablon view rooms. Not the usual cookie cutter chain hotel.
