The locations given above (the Douro Valley, City of Porto, Guimaraes, Braga) could be more than the hour’s journey you want to do to Portugal. I liked Valença a fortified hill top town overlooking Tui in Spain (also could worth a visit ). There is a bridge across the Rio Miño said to have been designed by Eiffel (famous for the Paris tower).
I personally do not find Vigo of interest. It is the largest city in Galicia and the most industrialised. Hit it on the wrong day and all of the touristy area is hit by an influx of passengers from a cruise ship.
Finding a place with accommodation, restaurant and bodega is going to be hard. But there are a lot of Casa Rurals located near to bodegas so I would suggest settle on the accommodation first, and have a look for bodegas around the house. Or ask them when booking what is there nearby.
