Hi Bhavin...as somebody who has lived in India all her life I would suggest that you wait to make your trip during summer weather. You can't imagine how cold it gets during February in the countries you are planning to visit. Especially if you are used to the weather in Mumbai it would be even harder.
You maybe too far ahead in your planning and may not want to change your plans...however think again about your trip. You will enjoy the same trip a lot more around June/July. Being chilled to your bones is not a great experience...
However if you decide to go ahead with your trip be ready to spend lots of times indoor and get very warm clothes with a lot of layering.

ideally you have two trips here - one to a city or two in the winter, and another to Switzerland in the summer. if you can only do one, I'm with rajshiv that you should make it a summer trip so that your desire to see the Jungfraujoch and the surrounding area has the best chance of being fulfilled.
if you can do the two, your winter trip is already quite full - Paris, Florence and Venice will be quite enough for 10 days, particularly as the hours of daylight will be quite short.
hope you and your fiancee have a great trip, whatever you and she decide to do.

Bhavin - only you can decide what you want to do - it is really impossible for any of us to tell you if you should go on a cruise or not.
Get a good guide book for each of the places you are going and sit down with your fiancee and decide what YOU want to see and do.

Guys,
Again want to recheck & reconfirm that , Mount Jungfrau and Cable car at Mount Titlis in Swiss are fully functional during February 2013 .
I am aware about that no one predict/give me a guarantee about Whether of February but wants to hear your feedback/experience regarding same.

I'm thanking u everyone from bottom of my heart for sharing information & Experience .
I been to Europe(Italy,Swiss & Paris) for 14 nights as per what i have planned & Its been been wonderful wonderful experience .
The only mess my tour did with me by sending us in Salerano instead of demanding Amalfi cost rest of the trip was amazing,superb & fantabulous
