I don't want to edit the post at this point but I want to apologize for giving the wrong region name.
I do think going to Paris for a day or so the OP implied doesn't make a lot of sense. Either see more of Paris or see more of France....

Thanks for your help and suggestions everyone! Based on some suggestions above, and my own feelings about it, I've decided not to fly back out of Iceland and to add another night or 2. Flight came out more expensive, but I think it will be worth it. We would basically lose 1 day by going back to Iceland and then spend another day in Reykjavik before our evening flight, not to mention airport time. Would rather fit in a few days in Belgium, since it's close to Paris. I also decided to do Iceland over Scotland, mainly because I want to spend more time in Scotland (at least 4-5 days maybe) and will try to make that part of a future trip. I looked into flying into Scotland, and it came out more expensive. And really, we want to visit both Iceland and Scotland so we just had to choose one for now and save the other for later. As it stands, I think the trip will involve visiting Iceland, London, Paris, and Belgium. One day trip each from London or Paris or an overnight stay at a close city is possible. My planned itinerary is below.
Day 1: Arrive in Reykjavik (8:30 am) - Walk the city, relax, maybe see some sights on the golden circle road if we're up to it. If not, just take it easy.
Day 2: Drive down the southern coast to Vik. See the waterfalls, glacier, and beaches on the way. Spend the night in Reykjavik.
Day 3: Fly to London AM
Day 4: London
Day 5: London
Day 6: London - maybe take a day trip to Bath, York as suggested above or another place nearby London (I haven't really researched possible day trips yet)
Day 7: London
Day 8: Take train to Paris AM
Day 9: Paris
Day 10: Paris
Day 11: Paris
Day 12: Leaving this open - either another night in Paris or a day trip/overnight somewhere nearby in France
Day 13: Train to Ghent, Belgium
Day 14: Ghent
Day 15: Day trip to Bruges (overnight in Ghent)
Day 16: Ghent --> Brussels
Day 17: Morning flight from Brussels back home.
Thoughts?

I'm glad you are spending more than a day in Paris.
I would not recommend York as a day trip. You'd spend a lot of the day on the train or driving. York would work well with your future trip to Scotland. Bath is a great option but there are many others.
