Scotland Itinerary

Planning to arrive in Edinburgh in a few weeks, staying at the Sheraton for 4 nights, then pick up a car rental and drive to Prince William area for 3 nights, then drive to Windermere, UK for 3 nights before heading to London for 4 nights. Plan to take guided day trip tours while in Edinburgh to see Stirling Castle, Rosslyn Chapel, Scottish Borders and more.
Any suggestions for self guided day trips while in Prince William area (staying at Inverlochy Castle) since we'll have car. How about a place to stop for lunch between Edinburgh and Prince William?
We love hiking, nice lunches, beautiful vistas.
