Just got back from Santorini. Three recommendations, depending on your budget and preference: In OIA, the 1800 house has amazing food and a beautiful rooftop terrace which offers gorgeous views of sunset. It is expensive though, but we actually thought this one was well worth it! The restaurant is along the pedestrian walkway in OIA.
Also really liked NICK'S TAVERNA, which is close to the 1800 house, but much more casual and slightly cheaper. The grilled fish there was out of this world! NICKS also has a rooftop terrace, but there is no view of the sunset. They do have a section of street-level restaurant that is waterside, but when we visited, it was closed due to strong winds.
Also in OIA, down at the bay ( AMOUDEH? I'm spelling it wrong-sorry) we went to DIMITRIS, which is a wonderful fish taverna right on the water. One of the owners is a young Canadian woman who married a local ( Dimitri) and moved to Greece! The food was sensational and quite reasonable. You can access the restaurant either by taking the ZILLIONS of stairs near the castle ( end of the pedestrian walkway in OIA), or taking a taxi. You will need to take a taxi back to your hotel after dinner. The restaurant will call one for you, but it may be a bit of a wait.
Hope you enjoy Santorini as much as we did! Are you going to do a tour of the volcano/sulphur springs? If so, post again. We had a fantastic time going out on a private sunset cruise with "Captain George", a very enthusiastic native Santorinian (??), who should be hired imeediately as the official meeter and greeter of Santorini!
