The best beaches are Kamari and Perissa, but you should know that all the beaches are either rocks or pebbles or both, no soft sand. Kamari and Perissa are black so they are very hot for the feet. Be sure to take flip-flops.
Here's a link to a list of many hotels all over Santorini. The Anemoomilos Hotel in Oia is a very good bargain.

A few years ago, I was planning a family group trip, and I was considering Villa Mathios because of the good reviews I read on Matt Barrett's site. The trip never happened, but I had received some brochures from the hotel, and it looked like very good value for the $$. It did not have a caldera view, but I would imagine today that it would be difficult to get a hotel with that view for $80 USD. If I wanted a budget hotel on Santorini, I would look into Villa Mathios. Go to www.greektravel.com, click on islands, Santorini, places to stay, Villa Mathios. Unfortunately, they don't list prices on the site.
Good luck, and have fun; Santorini is spectacular!

Becasue of the amazing views I think Santorini is a place to go a bit over budget if it gets you a good location, personaly I would down budget other places on your trip and go up budget for Santorini.
