PQ - sure it has a transport system, but if the objective of staying outside town is to get off the grid, they would likely be off the transport network too.>
Where do you read that they 'want to get off the grid"? - OP wants recommendations of a 'town' and any 'town' nearby will have transport to Salamanca -that said Salamanca is one of the prettiest most whatever towns I've been to in Spain - I'd stay there - I recall a small big town where driving may not be too daunting.
Stay in Salamanca - with its lovely squares and univeristy's old buildings wonderfully illuminated at night - folks eat late in Spain - small towns or 'off the grid' may have few restaurants where cosmopolitan Salamanca has lots to chose from.

or find a little place out of town, and if so which town would be lovely>
common 'out of town' means outside of Salamanca - and, a town, as the rest of the quote you somehow did not read says!
Duh!
