<Is there any other place to see a list of the trains that won't be covered?>

Well here is the current list of trains that are covered by the pass but which require mandatory seat reservations and supplements - so you now will know exactly what is and what is not covered.
Again most of the zillions of trains a day you can just hop on with a pass and pay nothing extra.

And keep in mind that some of the large supplements for first-class travel, like on Thalys, may well include a meal - in Thalys case a full meal at your seat with wine, etc.

Reservation fees domestic trains

This page shows an overview of reservation fees for the most common domestic trains (trains that do not cross borders with other countries). For some trains reservation is compulsory, for others it is optional.

Advance booking is recommended in high-season. Some trains (Thalys, TGV) have a limited number of seats for Eurail travelers.
