Rome to Brindisi Connections
 
Can anyone tell me if I can walk between Terminal 3 and Terminal 1 at Fumicino for our connection to Brindisi and if two hours is enough time if our luggage is checked all the way through? What is the process?

We did this a couple of years ago and it was easy, you should have plenty of time. As I recall we went upstairs after passport control which was cursory, checked in with Vueling, went through security again and that was that.
I do remember there being quite a lot of people jostling around to go through security and the lines were disorganized, so maybe don't grab coffee etc until you are through security.

You shouldn't need to go through security, although if you're coming from outside the EU and transferring to an EU flight, there is usually a small security check right after you enter the terminal.

Since your luggage will be checked through, just follow the signs for transit passengers, and then the signs for your boarding gate area. You won't see any signs for Terminal 1, just signs for the gate areas.

Two hours is plenty of time. I've made similar connections at Fiumicino with less than an hour.
