Is Rome generally great to discover at night though? Since I have a short time there, I do plan to squeeze every minute of my time discovering it. But I worry it might be too dark/unsafe at night?

Last year I remembered my visit to Moulin Rouge, then the Arch of Triumphe and a stroll down the Champs D'Elysees at night- the people were out and about, you get to see the essence of Paris at its Best.

What about Rome?

There are tons of people out at night in Rome and it is beautiful! You really ought to see everything at night that you've seen during the day. Stay in the busy areas (like Spanish Steps, Piazza Navona, Pantheon, etc.) and obviously don't wag your camera around (although if you DON'T have a camera out at the Trevi Fountain, you'll probably attract attention to yourself ;-)).

What do you mean, wag camera around? As in attracting attention of pickpockets, etc???

I had a little book called "shopping in rome" which had some great walks around some of the less well trodden areas [like monti where we stayed] with maps and restaurant/cafe ideas too. It was just the right size for the handbag.

I meant that if you have a camera, don't carry it around in plain view when you're not using it, and use the strap to keep a firm grip on it. Just a basic precaution.
