Restaurants along the Rhine

I will be taking a river cruise down the Rhine from Amsterdam to Vienna in May.

Although the ship provides dinners, I would like to eat locally whenever possible.
The towns that I am interested in are Cologne, Mainz, Wertheim, Wurzburg, Schweinfurt and Regensburg.

Does anyone have any recommendations for good food, quaint ambience and local color in these towns, preferably close to the river???

Not knowing where your boat will dock, here's some suggestions:
Mainz - www.heiliggeist-mainz.de/
Cologne - walk into the altstadt a pick a place owned by one of the Kölsch breweries
Regensburg - can't remember the name, but the tiny wurst place right near the bridge

Probably one of the posher restaurants I know is the restaurant at the Hotel Krone in Assmannshausen on the Rhine ( http://www.hotel-krone.com/de/hotel/). The day we ate there I did not realise what a high-class restaurant it is and we were a little unprepared (financially and dress-wise). I would definitely recommend it for a special occasion, though, as it is really lovely, and in a beautiful part of the world (the right bank of the Rhine, near Ruedesheim, where the river bends).

Oops, I only just realised your boat won't be docking there after re-reading your post. Apologies, maybe someone else can benefit from this!
