Just to add my two cents..Those restaurants in Florence are mentioned in every guide book to the city and they are packed with toursts. The first is ordinary; I have not eaten at the second but it is not a local village-type place such as the OP is seeking. I that category would include places such as Antico Ristoro di Cambi; Alla Vecchia Bettola; and many others south of the river and away from Santo Spirito. One of my favorites is Il Guscio. I ate there twice on my last visit to the city and wrote about it in my food report posted here.
In my opinion, the SlowFood Osterie guide is one of the most reliable sources for restaurants serving good regional food. You can do a search on their web site. Also, I loved Latte di Luna in Pienza.

I rarely see this Florence restaurant mentioned anywhere, but it was great. From my trip report of this past May:
"My daughter recommended one of her favorite restaurants, the Trattoria Garga on Via del Moro 48/R, phone 055 2398898. We had an amazing meal there, probably my best in Italy. My dish was veal with avocado, which sounds odd (most really good dishes do, I think), and was mouth-watering. Our waiter was a riot-- singing and joking all over the restaurant. It was a friendly, lively, bustling atmosphere with excellent food. We paid 81EUR for two, with a half-liter of house wine."

You're going to have a wonderful trip - I just feel it! We loved Latte di Luna, have eaten there twice and still talk about it. We've also eaten at La Grotta and, to us, it was expensive and not exactly a "local village place" although we very much enjoyed our meal. In Siena, I recommend Trattoria La Tellina. I just returned from Italy and I went back to La Tellina after having visited them six years ago, and the food is still great. Best tiramisu I've ever had in my life. It's very small though and unfortunately, it is now featured in the Rick Steves guidebook so it's becoming more popular but I really love this restaurant. Go in a make a same-night reservation as soon as you arrive in Siena.

One of the best meals I had was in Cetona. I don't remember the name of the place but if you walk through the main square to the end you'll see a large bar/cafe. Walk around it to the left and behind the bar is a wonderful restaurant with an arbored terrace. Moderate prices and great food.
When we asked for a menu at the cafe the woman took us around the back to the restaurant otherwise we never would have found this place.

adrienne: RISTORANTE SOBBORGO in Cetona. One of my favorites. Ate outside one night and downstairs another. This is a local village restaurant and can get very busy. Busy because its fabulous. The town square is perhaps a block long!

Thanks so much for the name of the restaurant. I probably took a business card for reference but I'm sure the card is buried some place in my files.
It was lucky that we found this restaurant. There were only a few other tables occupied on the terrace and non of the others were speaking English.
We arrived in Cetona in the afternoon during the week and the only thing open in that square was the cafe. The entire town was very sleepy. We made a special trip to Cetona because my friend whom I was traveling with has a friend who really liked the town. Of course when nothing was open and no one strolling through the square it wasn't very interesting so we had our wonderful lunch!
