Recommend French vegetarian and those dishes without beef & pork

We are going to Provence, Alps & Paris for 3 weeks. We want to try the local dishes which are vegetarian. We would also like to try those which have fish, chicken and mutton as we do not take beef and pork.

Any suggestions based on our requirements.

Not sure what you are after. You can get breads, fruits, vegetables, cheese, pasta, fish, seafood (fruites de mer), chicken, veal, lamb, mutton, ice cream, pastries, chocolates, wine and beer all over France.

If you want to try about anything but beef or pork, you shouldn't have a problem in Provence as other things are more common on the menus, anyway. lamb and fish are more common than beef and pork, it seems to me. There are various good vegetable dishes there, but you can just find them listed on the menus under "legumes" or the side dish section. I remember squash blossoms were served a couple times with dinners I had in Provence.

I haven't been to the Alps so can't comment about that, but in Provence and Paris, you can just order as you wish from the menus.

oh, I forgot -- both lamb and salmon are things I particularly like in Provence. They have a lot of good salmon down there.
