Puglia Restaurant Ideas -2 weeks to eat our way through

Starting a new thread as title of the old one not very useful... (apologies to those who ready this in the other one)

Anyway 2 weeks in Puglia - aim to have amazingly yummy food whenever possible. Here's our current thinking- any comments??/ restaurants i shouldn't miss/should take off????

We care about the food and if possible like setting...don't need to be upmarket, that is not important-in fact we prefer more rustic places (but if food amazing upmarket on occasion is good too)

Thanks All

Antichi Saproi was a very memorable meal for us as well. Unbelievable, really, and LOTS of food!

I don't know any of the other restaurants you mentioned, but we spent a week in puglia last summer and had meal after incredible meal. if you click on my name, you can find my restaurant recs in my puglia trip report.
