Provence plans - last minute advice?

Heading to France on Wednesday. Two nights in Montpellier, seven nights in St Remy. We have Stu Dudley's plan (Stu, thank you very much) - any other thoughts on things we should/not do. We're only good for one cultural thing per day - which could be a winery. Otherwise its food and wine and roaming. Thanks in advance for all the great advice!

While in St Remy, go to the Chateau Romanin winery. They built a cave into the side of a hill which is really beautiful. Here they would just throw up a modular building but they carved it out so it looks like the inside of a cathedral. Their wines are fabulous too.
We like to drive the Dentelles loup and stop at places like Gigondas and Vaison-la-Roman. Of course there are the markets-Wednesday in St Remy and Sunday in Isle-sur-la-Sorgue.
We love the tapenade in Provence and the hotel owner said to get it cheaper to shop in the grocery stores rather than at the markets. So we have done that and successfully brought home little jars of tapenade, pistou, sundried tomatoes etc.
Restaurants we like in St Remy: Alain Assaud (definitely leave room for dessert), La Serre, Maison Jaune(expensive) and Grain du Sel.
in Isle-sur-la-Sorgue-Le Jardin du Quai or out of town Mas de Cure Bourse.
I am sure that everyone has told you to go to Joel Durand for chocolates. Listen to them.

Go to the Tourist Office to get the pamphlet for the Van Gough walk. Really cool to see the print at the actual location he painted it. We liked Les Baux just a few kilometers away from St. Remy.

Les Antigues,on the right side of the road) which lie just outside the city, comprises a commemerative arch and a mausoleum, examples of Roman stonework.
Glanum, across the road, once a sanctuary city and then a commerce center during the Gallo-Greek years but in Roman times it was left in ruins by invaders in the 3rd century.
