lol sbrian, I thought the same when I wrote that but I was too lazy to change my wording. To be honest, they ARE dry! Just not "two centuries old dry."

I love Uzes, you can visit the Alpilles, one of my favorite areas. There is a great market on Saturdays.
In St Remy, besides the cookies, try joel Durand's chocolates.
Mid June through July is the best time to see the lavender fields.

We had a great time in Provence in February. Although it was cold -- really unseasonably so, the locals said -- it was no colder than our Midwestern winter. Actually, it was warmer, and there was lots more sun.

We had a great apartment in Avignon, about five minutes from the Gare Centre and five minutes from the Palais du Papes.

The best thing -- hardly any tourists! Hardly anyone spoke English, either, which was great for my dad, husband and me to practice our French.

It was a wonderful time. Thanks for all your advice. I'll write a trip report sometime soon.
