Anywhere I've ever booked a room they would not accept the reservation without having my visa number. I've never had a problem with it but if it worries you why not have a special visa issued from your bank and have the allowable balance very low.....it would mean no one could use it much before it went over it's limit.

Oh and I'm sorry, yes confirm by email is a very good idea. You then have a copy of the correspondence.

FYI, we actually had one hotel (in Venice) request a check equal to one night's stay to hold our reservation. After checking, this seems to be fairly common so do not be alarmed if asked.

depending on the country and the size of the accommodation it vīcan be quite uncommon to reserve a room with a credit card.

Several small accomodation to not except credit cards as payment, because they are afraid of the costs.

Be prepared for alternative payment methods.
