We went to Ireland for our two week honeymoon at the end of May early June 2004. We stayed in all of the places you did(plus many more) and had our B&B's booked by Mid-March-we were surprised that some places had no availability(of course one weekend was a bank holiday so we were glad we booked ahead of time). Just email the B&B they will email you back(ususally takes a few days). We booked eveything through email on our credit cards and had no problem.

Call the B&B's if they list a phone number and ask them to confirm by mail.
