Portugal, Southern Italy or Greece - any opinions on which we should go to next?
We have been fortunate to have travelled to England(London, Bath, Stratford), France (Paris, Normandy, Loire), Amsterdam, Bruge, Germany(Rhine/Mosel, Munich, Bavavarian Alps),Italy (Rome, Florence, Venice, Tuscany)and Spain (Barcelona, Andulucia). We loved all of these places and are now trying to decide where to go next year in May for two weeks. We like to tour around the first week and then stay in one place the second week and take day trips and enjoy the area. We love to soak up the culture, see small towns and historic areas, swim in the ocean, enjoy the pubs/cafes, and eat well. We are considering Portugal(Lisbon, Algarve, Porto) or Southern Italy(Almalfi Coast, Calebria) or Greece(Sanotini, etc) with possible trip to Instanbul. Any opinions on where we should go next?

Sicily.
We like Portugal but it is not as intriguing as Sicily.
And for Spain, try San Sebastian and the small towns that almost circle Madrid including Toledo, Avila and the not oft visited Cuenca.

Sounds like fun and you have some terrific options here. I would add one more. Spend 5 days on the Amalfi coast and then go to Sicily for the balance. We loved Sicily in May---here is my report. http://www.slowtrav.com/tr/tripreport.asp?tripid=634
