Please help with itinerary decisions for Amalfi Coast and Tuscany or Umbria.

If you do spend some time in Umbria, I highly recommend visiting the town of Norcia and then driving the 45 minutes further to the breathtaking vally called Piano Grande. One of my favorite days in Italy (of 20+ trips) was this day trip. Be sure to go on a sunny day.

After reading so many great things about Piano Grande, I actually was seriously thinking about a side trip. I checked with Michelin and YahooMaps though and they both said it was about 140 MILES and about 3 hours from Spello. It did however show a crazy loop along the coast to get there. I started to wonder whether 6 hours of driving was worth it. Does it really take that long?

I think you are getting some bad information.
As I recall, it took me about 1.5 to get to Norcia from Bavagna (which is very close to Spello), including a stop or two along the way. I just checked on mappy.com and they say it will take an hour to go the 69km from Spello to Norcia. From Norcia to the Piano Grande it takes about 45 minutes.

I too highly recommend the Piano Grande - quite special. Take the scenic road from Norcia to the perched town of Castelluccia and then on to Visso.
FYI, there's a tunnel just to the north of Spoleto that cuts under the mountain range and gets you quickly into the Val Nerina which, in turn, leads to Norcia. And I suggest a visit to the beautiful village of Scheggino.
