I was in Greece a few years back. Did a classical tour of the mainland. Delphi was the highlight of the tour for me--it is so beautiful. Went to Meteora on that tour. While the monasteries were unique and fascinating from the outside, I found the insides to be oppressive.

Stayed in Chania, Crete for a week at both Old Town and on the beach. I'd never had Mediterranean food before and, while there, discovered I loved it. My favorite restaurant was Well of the Turk in Old Town; we returned several times. There is also a pottery/jewelery shop in Old town that I just loved and will go back to Crete if only to shop there. I just pulled out their business card--its Carmela's on Angelou 7.

In Santorini, we stayed in Oia. The highlight (other than drinking wine on the patio while watching the sunset over the Caldera) was a sunset sailboat ride with wine and live music (a horned instrument as I recall). Do plan your trip around the cruise ships--the walkways became unpassable when they were in town.

I know Americans (assumption alert) travel differently from us Brits, but I could not do that trip. My experiences with Greece are limited. I've been to Athens (one day twice whilst passing through), Lesvos ( a week) and three times to Crete (all times two weeks). We haven't scratched the surface.

I would live in Crete. Gorgeous island. Fabuous scenery. Nice food. Paleochora is my dream destination
