As to Sunday hours, it depends on the type of passages--some are open-air but gated. The stores generally are not open.

By the way, on one edition of my Streetwise Paris maps, all the passage street sections are outlined in a sort of gold. I didn't even realize it until one trip when we spent around three days doing nothing but passages.
