I also wondered what early dinner means becuase in a lot of places, that is simply not possible, they aren't open before 7:30 usually.

I"ve never had rare meat in France, you specify how you want your meat cooked, at least for steak, and I think lamb, also (I can't remember the latter, but I know they ask about steak). So I order it the way I like it, which is medium (a point) and that is actually what I get. If by not liking rare meat, you mean you don't even want meat unless it has no pink in it at all (a point should have some pink in it, but not red), you can order it well-done in some places. I would never eat that kind of meat, so am not sure, but I think some places won't cook it that way from what I've heard (well done or totally gray).
