I always find that the cost of coffee and a sparse breakfast can really add up each morning. I enjoy breakfast at a cafe a few times and aside, travel with my own travel coffee pot and just pick up some goodies at the local boulangerie. Also, duck into the local markets to grab a drink when you are thirsty as compared to ordering from a cafe (unless you want to soak up the ambience). Lastly, purchase a "carnet" which is a block of 10 tickets for the metro. It is less expensive than individual purchases. Lastly, I believe some museums are free on certain days of the week. That would be something that could save costs too.

I'm finally going too, and have spent the last month researching hotels and apartments.
Paris-sleeps sounds great, but is way out of my price range.
nyhabitat.com
holiday-rentals.com
are a couple that have lots of inexpensive offerings. Another advantage to an apartment is that many come with a washer.
Good luck!
