I spent 3 weeks last May and agree with many of the things on your list, buying the weekly metro pass, visiting the cemetaries, also one can spend a day going through the antique markets near metro clingencourt (sp) need to worry about pickpockets there, I would recommend a day trip to Monets gardens, absolutely exquisite, I took so many pictures that I had enlarged and framed. Also took a 3 day trip on the hispeed train to Avignon and a day tour to many of the french villages( where I would go back to in a minute) Had no problems with the Pariesans very helpful, always carried a small umbrella and little rainjacket and used them every day. Bought my water from the local grocery stores and even attended the french open(on my lifetime lists of to-dos.) I went to a different arrondisement each day on the metro and walked around and visited all the side streets, chapels etc. Hope to get back to the south of france this yr.
