Paris is relatively compact and combined with the superb reach of the metro, you can really see a lot in a relatively short period of time. Of course you'll want to see some of the famous monuments and for that, it's a simple matter to just start in the middle on the right bank and take a long walk from, say, Notre Dame to the Arc de Triomphe up Rue de Rivoli and the Champs Elysees. Great places to hang out? The Latin Quarter and Saint Germain. Just cross the bridge by Notre Dame and begin meandering. The Seine always provides a handy reference point and if you get lost, there will always be a metro station nearby that can take you back to something familiar.
I'm not much for "must-sees". Just get a decent guidebook and pick out things you might like to see. If you miss something, just catch it on your next visit (because you will definitely be back.)
If you can manage it, you do more than simply day trips because the travel between London and Paris could consume six hours of your time. You can stay overnight in Paris relatively inexpensively and it will give you much more flexibility.
