Can anyone provide recommendations for good bistros in the 1st arrondissement?

Very general question. The Zagat Paris restaurant guides list places by arrondissement in the index. Other guides may do the same. Check the Michelin travel site for instance.

Brasserie Flottes, Au Pied de Cochon, Le Soufflé....that said, it's the heart of the business district so not so much emphasis on the wonderful neighborhood bitros that abound in more residential parts of Paris.

Parisbymouth.com is also searchable by arrondissement. If you're willing to venture into the 2nd, I can recommend Bistro Volnay.

Au Pied de Cochon, recommended above, is a few seconds walk from Dehillerin, which you mentioned wanting to visit. Known for its onion soup.

Au Gourmand, 17 rue Moliere, is w/in walking distance from your hotel.
