Paella in Sitges?
 
We are returning to Sitges after many years. We fondly remember eating Paella there -- but realistically, not sure if the same restaurant will be up to our memories. Any suggestion for excellent Paella there?

Paella isn't a Catalonian dish (it's from Valencia Province), so you are eating something that's not a native dish, though you find it on almost all menus. Always go to a place that cooks it fresh (you know it because there's usually a minimum order of two people) and preferably where they use black rice (arroz negra).

Black rice with Paella ?? nooooooooo, paella doesn't have black rice , this is another different dish , called as its name implies "arros negre" (black rice".

I thought paella rice was bomba or calasparra...(??)

Yes, bomba is the most usual :)
