Olive oil & parmesan in Florence

A little background--We've travelled in Italy a number of times and have always returned with staples. Our bags and luggage have been ridiculous at times but we have always enjoyed authentic olive oils and cheeses. When in Florence, we have always included a trip to the Mercato Centrale to check out the offerings but we most always buy our "staples" in southern Tuscany.
My wife will be visiting Florence in a couple of weeks at the back end of a business trip and she has plans to stock up on good olive oil and Parmesan. Does anyone have a recommendation for a local outlet in Florence for these items? Thanks. Paul

I couldn't tell you the name of it, but we bought several items at a wonderful little shop that was on the left-hand side of the Duomo as you are facing it. If she just browses down the line of shops there, she'll come across it.

Paul, while visiting my daughter in May who is living in Florence I told her I wanted to bring back oils and balsamic. She took me to a place that she had gone to for wine tasting and said he would do an oil and balsamic tasting. It was great and I did bring back items. His web site is www.oleum.it and you will find his address there. He also makes the greatest sandwiches there. It is not too far from the Duomo on via S. Egidivo. Good luck!

Thanks Statia and kadurk49. You're suggestions are on our list--Oleum looks like it will be quite the boutique and I wish I was able to shop it as well. I'm sure my wife will check it out.
Does anyone know of any cooperative outlets in town? Also any great cheese shops? Thanks again-Paul
