Is a NZ passport with 5 months validity OK to travel to UK and Croatia?

In the case of the UK, yes - as long as you're merely travelling on business or as a tourist.

A validity of 3 hours is perfectly fine, as long as you'll have left the country within those three hours. As someone whose shortest visit to NZ is 2 hrs, 15 mins (for a nice supper in central Auckland en route between Fiji and home) I can attest that lots of people DO make three hour visits to countries on the opposite side of the planet. It's not in Britain's interest to invent the pettifogging barriers to entry our xenopobic neighbours in the Schengen zone delight in dreaming up.

If you're travelling for a purpose that even NZers need a visa for (it's a source of constant shame to most of us that those xenophobe neighbours force us to treat you like foreigners) - like studying, getting married or doing a gap year - you DO need a passport with a validity of six months or more.

As for the Croats: dunno. They're continentals, so I wouldn't put anything past them. What does their website say?

Not sure what di2315 means by in Australia your passport has to have at least 6 months etc! I have an Australian passport and have travelled to countries with less than 6 months left on mine. The traveller needs to check the requirements of the country she is visiting.

Here's a quote from the Australian Government website to clarify:

Australian passports are valid for travel into and out of Australia regardless of the length of remaining validity. An Australian passport remains valid until the expiry date.

However, it is the right of any country to control entry into their borders and this is usually done via visas or ensuring sufficient validity remains on the visitor’s travel document. Entry requirements are decided by foreign governments and are not something that the Australian Government can influence.

You need to ensure that your passport has adequate validity to meet the entry requirements of the countries you intend to visit (or transit). Some countries require travellers to have at least six months validity remaining on their passports beyond the period of intended stay, and immigration authorities may refuse entry if you arrive with less than this. Airlines and passenger shipping lines may refuse to carry you if your passport has inadequate validity.
